This global pandemic has definitely brought upon the inner chef in us. I also decided to restrict myself from heading out as much as possible and when I can I try to buy enough food for an entire cutoff roughly about 2 weeks. I also try to have something to look forward to each week and that means treating myself to a nice meal over the weekend and this week I made some Garlic Ketchup Shrimp.
Disclaimer: I am not a professional chef and what I do is basically according to preference. The good thing about cooking is that you can adjust it to your liking. I would also address that I do not devein my shrimp - why? Well, I grew up eating and having shrimp prepared that way by my parents. Also, we lived in a coastal area and we are getting shrimps fresh from the catch of the day. When I finally had the chance to cook for myself, I never had the energy to do that too. So there's that. But, hey you do you.
Let's get cooking!
Step 1: Ingredients are pantry staples.
- Onion
- Garlic
- Butter
- Ketchup
- Thai Chili sauce *optional
- Sriracha *optional
If you cook and bake, you can definitely be a stickler for butter and that goes for what I choose when I shop.
I got this German branded butter in the groceries and it was perfect. I love good butter! I prefer foreign branded versus the local ones - I just don't like that artificial aftertaste.
Step 2: Cook shrimpIf you keep your shrimp frozen like I do. Also, do you portion your shrimp? Because I do!Step 3: Cook the aromatics
Add butter on the same pan you cooked the shrimps in (yes, we will cook in one pan!) and cook your aromatics until transparent.Step 4: Add ketchup and some Thai Chili sauce
While the aromatics are cooking, add some ketchup, Thai Chili sauce, and Sriracha for some added kick.
Since I love the taste of ketchup, so I add more ketchup compared to the Thai Chili but if I am a bit sassy I switch it up a bit.
Step 5: Add shrimp
Cook until well coated.
Served with freshly cooked rice, a cold glass of your favorite soda, or beer. Whatever works for you. And definitely dig in with your hands.
