Guiltless Gourmand: Banana Cupcakes

Generally, if I get too stressed, I bake and recently I have been trying to awaken my creative side by doing a few arts and crafts - hence I watercolor every afternoon for the past few days now. Work has been shitty lately and all my attempts at watercoloring is just not working. Since it wasn't doing the trick, I decided to bake instead. I love bananas and since they are available year round, I thought to bake some for my team. I wanted to share this simple cupcake to you. Anyone with or without baking experience will be able to whip this up.

Ingredients:
  • 2 cups APF (All Purpose Flour)
  • 1 1/4 cup white sugar
  • 1/2 cup butter
  • 1 1/2 tsp baking powder
  • 1/2 salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp milk (evap/fresh)
  • 3 eggs
  • 1 1/4 cup ripe banana

1. Mix all dry ingredients together: flour, salt, baking soda, baking powder and cinnamon in a bowl and set aside.

2. Using a mixer, mix butter and white sugar until all sugar granules have been dissolved. Add eggs one at a time until mixed. Add in the milk and vanilla.

3. The recipe calls for 1 1/4 cup bananas but I wanted to have more banana on the batter. I prepared 4 bananas. 2 I mashed and the remaining I sliced in small chunks. I want the batter to have a chunkier feel.

4. Start adding the dry mix (flour mix) to the wet mix (butter mix) slowly by cutting the dry mix in half and mixing all ingredients together. Then finish off the remaining dry mix to the batter until dissolved. Ensure that the batter has a smooth consistency.

5. Preheat oven until thermometer reads 180°C. 

6. Using an ice cream scoop, portion out the batter into baking tins with your favorite baking paper cups.

7. Pop in the oven for 18 minutes until cooked. By the 9th minute, I generally open the oven and turn the pan for a more even cooking. This step is also done for everything I bake.

8. Once cooked, take out from the oven and let cool. This recipe can yield as much as 28 cupcakes in a 3 oz cup. If you wish to have more, use a smaller ice cream scoop and paper liners.

Tip: Topped with Nuttela or peanut butter for a more luscious experience.
